Tomato pachadi
Tomato pachadi is a South Indian dish which is served with rice. It is considered as one of the important dish for the feast. The dish can be prepared in a short span of time with minimum number of ingredients, but the outcome is awesome.
Preparation method
* In a small pan, boil tomatoes till it is half cooked.
* Grind coconut, curd, green chillies and 1 spoon mustard seeds.
* Add salt as needed to the half cooked tomatoes.
* Add the grinded mixture to the tomatoes and keep it in the flame for not more than 2 minutes.
* Take it out of the flame.
* Pour 2 spoons of oil in the pan. Once boiled, add mustard seeds, red chillies and curry leaves and wait till it splutters.
* Pour that to the dish.
Now, you have the wonderful pachadi which can be served with rice.
Preparation time : 15 minutes
Serves : 4 persons
Ingredients :

- Grated coconut = 1 cup
- Curd - 1/2 cup
- Green chillies - 4
- Mustard seeds - 2 tsp.

Vegetable bonda
Vegetable bonda is an awesome snacks which can be served with coconut chutney. As it is prepared with all the vegetables, it provides all the essential minerals and vitamins in tasty pack.
Ingredients
Makes : 12 bondas
Preparation time : 30 minutes
To prepare mix:
Ingredients
- Gram flour - 1 cup
- Rice flour - 1 cup
- Mixed vegetables - Carrot, beans, potato and Soaked peas
- Chilli powder - 1 tsp.
- Urud dal - 1/2 tsp.
- Mustard seeds - 1/2 tsp.
- Curry leaves
Makes : 12 bondas
Preparation time : 30 minutes
To prepare mix:
- Mix gram flour, rice flour, chilli powder, asafoetida powder and salt.
- Add sufficient water to make paste.
- Heat oil in a frying pan.
- Put mustard seeds, curry leaves, bengal gram and chana dal and let the mustard seeds splutter.
- Add carrot to the pan and pour water. Add chilli powder ( and if needed, a little garam masala powder ( 1/2 tsp.)). Add salt as needed.
- Once carrot is cooked, add potato and peas and fry till the mixture coats the vegetable. Make sure that the mixture does not contain much water otherwise it will be difficult to make balls.
- Let the vegetable mixture cool for sometime and then make balls of the size of lemon.
- Pour oil in a kadai.
- Dip the balls in the paste and fry the balls till it is deep brown.

Kerala Vegetable Biryani recipe
Biryani is one of the favorite dish prepared with spices, rice and vegetables. As the dish contains all the goodness of the vegetables blended with excellent taste, it is prepared widely for all the occasions.
Description : Vegetable biryani
Preparation time : 20 minutes
Serves : 6 adults
Ingredients
- Basmati rice - 3 cups
- Mixed vegetable ( carrot, beans, soya beans) - 2 cups
- Green peas - 1/2 cup
- Dry fruits ( cashew nut and dry grapes) - 3 tsp.
- Salt - to taste
- Chilli powder - 1/2 tsp.
- Coriander powder - 2 tsp.
- Garam masala - 1/4 tsp.
- Ghee - 4 tsp.
- Ginger and garlic paste - 1 tsp.
Preparation Method
- Fry the rice for a minute in a frying pan. Wash rice well before cooking.
- Heat ghee in the pressure cooker.
- Fry the cashew nut and dry grapes for 1 minute.
- Fry the mixed vegetables and peas for 2 minutes.
- Add chilli powder, corainder powder and garam masala to the mixture and fry for 1 minute.
- Add salt to taste.
- Pour 41/2 cups of water to the mixture and pressure cook for 1 whistle.
- Keep the vegetable biryani in the serving dish. Garnish it with dry fruits and corainder leaves.
